We’d like to share the recipe of the authentic Taiwanese cuisine-The Hand Made Noodle with Camellia Oil
材料 Ingredients:
手工麵線 Handmade Noodle(threaded noodle or longevity noodle);
山茶油(苦茶油) Camellia Oil;
蒜頭 Garlic;
枸杞 Goji Berry;
青蔥 Green Onion;
醬油 Soy Sauce(非必需optional)

手工麵線,因為製作過程中有加鹽增加韌性,所以烹煮可以不加鹽或醬油。反之,若使用機器製的麵線不僅麵體較軟,也不含鹽分。
The reason that soy sauce is optional is that if the noodle is handmade, there is already salt in it.
In other words, if you use regular machine made noodle, soy sauce or salt is required.
(Unfortunately, this kind of handmade noodle is very rare outside of Taiwan.)
將苦茶油倒入鍋中 加熱至 160~180℃。苦茶油,發煙點在220℃ 以上,是理想的炸油。
Pour the Camellia Oil into the frying pan and heat it to 160~180 ℃. Camellia Oil has a smoking point as high as 220℃, making it an ideal frying oil.
將蒜末倒入鍋中炸。入鍋一定要聽到波滋波滋的油炸聲。溫度太低會軟爛的口感。
Pour the garlic into the pan to fry. The oil must be hot enough to generate the sizzling sound; otherwise the garlic will not be crispy and will have a bit of mushy texture.
枸杞子滾45秒。
打個岔,俗話說『男人離家千萬里,不食枸杞子』,大家可以猜猜為什麼 🙂
Boil the Goji berries for 45 seconds.
Here is a question for the curious ones: The saying has it “no Goji berry for men traveling far away from home” WHY???
多的蒜酥用盒子裝起來在室溫下可以放至少一個月,下次煮就方便多了。
The extra fried garlic can last at least one month in a sealed container under room temperature, a little tip for busy professionals.
加點熱湯,帶出蒜香味,等會兒麵線也不會黏在一起
